Anatomy of a Salad: Breakfast Greens De-mystified

By now, it is no secret that I love rainbows.

I profit of almost every occasion to explode into one.

But it doesn’t stop there–I eat rainbows, too.  In fact, I eat them first thing in the morning.  My morning meal mantra: Eat Rainbow. Become rainbow.

Now, I know a number of you didn’t completely bash the notion of having salad for breakfast, and even offered a few words of enthusiasm–but as we all know (ahem! Greenola!), thinking something is a “good idea” does not always equate to carrying out said good idea.

Therefore, when I presented to you the (In)sane Challenge to eat salads for breakfast, I did so without much expectation.  You’re going to do whatever you’re inclined to do, and who am I to stop you?  After all, I’m just the small, helpless, dreamer girl, remember?  But my goal is to provide you with some tools.  Possibly some possibilities.  Dreamily some dreams.  Hopefully some hope.

If nothing else, an idea.  A really, really good idea.  Without further ado, I present to you the Anatomy of MY Salad: Breakfast Greens De-mystified (in 6 components):

  1. Pick a Brassica.
    CHOOSE: Brussels sprouts, kale, broccoli, and/or savoy cabbage. Sometimes collards.

  2. Adopt a Lettuce.
    CHOOSE: Endive, Escarole, Red leaf, and/or Romaine.

  3. Some Sweet.
    CHOOSE #1 (Fresh): A sweet potato, a couple of figs, apples, frozen bananas, or my favorite — a crisp Bosc pear!

    CHOOSE #2 (Dried): Apricots, figs, raisins, goji berries and/or dates (!!).  Unsalted sun-dried tomatoes can also be delicious!

  4. Crisp, crunch, and condiments.
    CHOOSE: Crunchy carrot rounds (or sometimes when I’m lazy, the whole carrot!), diced warm-colored peppers (red, orange, or yellow), crispy broccoli or alfafa sprouts, crunchy roasted chickpeas, and finally, CAPERS.  Or pickles.  If I’m in a “savory” mood, I’ll rip up some nori sheets too!
  5. Some Zing.
    CHOOSE: Italian parsley, Curly Parsley, and/or Cilantro.

  6. Feed on Fats.
    CHOOSE: An avocado, a variety of nuts (almonds, cashews, pistachios, walnuts, sunflower seeds, pumpkin seeds seem to be popular in my pantry), and/or chocolate. Chocolate always seems to help.

Finally, depending on how I feel, I’ll sometimes also want some grains. If this is the case, then I would typically toast a slice of whole grain bread (usually sprouted Ezekiel bread), have some Greenola, and/or eat a handful of brown rice crackers.

A few examples of all-together-ness:

…Aletheia in a Salad-shell.  As you can see, I give myself many choices for each step, and therefore, many possibilities of which I never bore.  Naturally, there are many other options I sometimes incorporate–steamed broccoli, hummus dips, or collard wraps, to name a few–but for all intents and purposes, this is only a rough guide.  I’ve been eating variations of this morning salad since I was 15, and look how I turned out!

See?  A perfectly normal, and socially acceptable human being.

*Crickets*

Okay, don’t respond to that statement.

But seriously — y’all should try this sometime.  Have fun with your greens.  Experiment a little.  You might still be on the fence about having greens for breakfast and that’s OK–just focus on getting in touch with the anatomy of your salad.  Figure out what you like and define your “Salad-Shell”.  Who are you in a salad? It might take you some trial and error, but once you get it right, I promise that eating yourself first thing in the morning never disappoints–because YOU, my friend, are more than a good idea.  Ha!

    Oh, gosh. I adore salad for breakfast. I eat it all the time (I just have to be in the mood,you know). I love your ideas and I wish I had that much stamina to make something so delicious everyday (since you were 15! That’s commitment!). Lately I’ve just been in a kind of wash-n-go phase. But your creations and additions sound scrumptious!

    Wow Aletheia! That’s a lot of ingredients in your salad, no wonder you love them so much. You know, the hardest part about a salad for me is not the making part but finishing it before it goes bad. Any suggestions on storing your salad longer? Now with a good salad comes a good dressing. I’m surprised you never mentioned anything about your favorite dressing, unless you eat them plain. Some of the creamier dressings overpowers the freshness of the veggies I find. Some salads actually taste really good with just lemon juice squeezed over top of them. Anyways, enough salad talk before I get hungry. Gonna go catch some zzz’s now. Nighty night. :-D

      AHA – tips on storing my salad longer? You’ll just have to wait until next post! Just kidding.

      My problem with salads seems to be the reverse–they never seem to hang around long enough in my fridge for them to go bad! But having said that, I do make use of a few “tricks” to keep my greens at optimum freshness–as well as to save on time. I wash all my greens in large batches at a time, more than what I’d eat in one sitting, drain them well, and store them in containers. I find that NOT mixing the salad components together enhances the longevity of my greens by a significant amount–it also maintains the textures and the freshness until the time I actually plan to eat the salad. Then, when I’m feeling particularly slack (which, I’m embarrassed to admit, is almost always), then it is only a matter of assembling the contents of said containers on my plate and making it look like an effortless rainbow. :-D

    Me,”saladly” speaking: loads of fruits, plus greens and nuts! Wether it’s at breakfast or later, my favorite salads are for sure those that mix the sweetness of fruits with greens. I think fresh berries go especially well with baby spinach, and a bit of green apple gives a nice crunch. I add some pumpkin seeds, sesame seeds almonds or cashews for added nutrition, some citrus juice for dressing, and all realy to gulp it down! This is by far my favorite mixes.

    But when I feel for a non-fruity salad, I often opt for romains, spinach, sweet red pepper, and garden fresh tomato and a few nuts and seeds in a home made pesto dressing. This is very satisfying!

      Mmm, sounds good to me! Yes! Like you, my favourite salads are those that mix fruits with greens! I particularly like juicy, water-rich fruits with crispy nutrient-dense greens. Like bosc pears with kale. Smothered in avocado. Mmm…

    I love the picture of you eating! You are too cute, and you have such good hair!!! Sorry, I know I am obsessed with hair.

    I love adding dried fruit to salads, and have you tried veggie chips? They give a salad the most delicious crunch!

    I’m just not a salad person. Well, no, I’ll eat it, and enjoy it, but between cold veggies and hot veggies, I like them hot! Stir-fried, boiled, broiled, steamed, etc. etc.

    I think it’s great that you eat the rainbow though. Eating a variety is the key. You won’t get bored and you’ll get all your nutrients!

      A good mix between cooked and raw veggies always works, too. As much as I am a devotee to raw salads (I like my non-denatured enzymes), I have to admit it’s really nice to switch it up a little. For example I got bored of my raw salad today (it must be because I’d been practicing eating them more than ever in the days leading up to this post…) and instead decided to steam broccoli, douse it in apple cider vinegar, tahini, and nutritional yeast. Spontaneity rules. Tasty spontaneity rules even more! :-)

      OH. MY. GOSH. I can only guess what you’re going to make with those avocados. Please? ;-)

    Wow I love this post. Your salads were a bit of a mystery to me…like, what is on that plate? So much color? Texture? I don’t have a big appetite for breakfast but sometimes I do a ‘salad wrap’ by wrapping up some fruit and greens in a big romaine lettuce leaf. I think I’m officially adopting this way of salad building :].

    How much do I love this post? And you?

    Nothing dresses up a blog post like colourful salad pictures, and of course, your adorable cartoons. I really love your step-by-step instructions. I love salads, but I’ve never made one that included an item from each of your little groups…that would make for a hearty salad! Especially with something like brussel sprouts…I’m not sure how you can eat raw brussels in the morning…I would be walking around hunched over in pain all day. I find them quite bloating and hard to digest that way, but I guess everybody reacts different. It is kind of sad, because I LOVE brussels, but I’m usually fine with them if I just cook them lightly. My steamer basket and/or oven are my saving grace in that regard.
    I do think this whole post is brilliant though, and it gave me a lot of new ideas for things to start incorporating into my salads (especially my morning salads!) I even sent a link to my mother and asked her to take a look, because she’s the type of person who eats romaine lettuce plain with a few bites of white tuna salad for lunch every day. That is just a sad looking salad, so I thought, who better than you to teach her how to spruce it up? She loved your post, and she’s been inspired.
    I’m really excited to take a picture of my next breakfast salad creation for you…I know it won’t measure up to all of your own creations, but I’ll do my best. I’m thinking something with a bosc pear, since I’ve never had one in a salad and it seems I’m missing out, with the addition of my loves: goji berries and hemp seeds. And maybe some sprouted quinoa or buckwheat.

    Have you really been eating salads every morning since you were 15??? Well, I guess you didn’t exactly say EVERY morning, but still… talk about commitment! :)

    Your salads really do look beautiful and delicious. I like how you’ve broken them down. So many people think salad = boring, but you’ve shown that can’t be further from the truth!!

    I need to work on getting more variety in my salad toppings. I don’t always buy creative things. Instead, my typical salad is the everything-but-the-kitchen-sink-salad…aka throw every available vegetable in my fridge into the salad and then scrounge about in the cabinets looking for fun mix-ins.

    Anyway, good luck with the challenge. I can’t promise that I’ll eat a salad for breakfast, but I might try….

    love the rainbow salads…the layers you chose are alll key for me, minus maybe “zing”. I use sweet in place of zing. but i do use apple cider vinegar so there ya go, zing.

    Salad for breakfast?! Interesting… veryyyy interesting! Hehe. Somehow salads just don’t seem like breakfast food to me even though your rainbow salad sure sounds appetising. It’s just like how people over here like to have noodles or even rice for brekkie. I’ve never been able to get my head round that. But greenola… now that sounds great for breakfast. Which reminds me… I saw avocados on special the other day at the supermarket. I ought to get right on out and buy them so I can pay homage to your dear greenola!! xoxo

    hey girl! yea fixed my feeds. i had to go to feedburner and change my settings from default setting to one that only allows 15 feeds at a time. maybe thats why so many ppl hate their blogger account. i still might change to wordpress..we’ll see. but yea i had to go on google to find out how to change my settings. so frustrating.

    Aletheia, you are after my own nutritionist heart. Not only are salads delicious and perfect for ANY meal, they’re full of healthy goodness that has me exploding into rainbows, too! Including cruciferous veggies, sweet fruits, and fats to help your body absorb the nutrients – genius :) And chocolate, WOW! I’ve never put chocolate on a salad, but that’s one of the first things I’ll do when I go home.

    You are so cute, Aletheia. I love that picture of you completely missing your mouth with the fork ever since I saw it in your header. Stay awesome!
